Opening week special of the local farm stand, zucchini--3 for a buck! What are you doing with yours?

Do you like Zucchini? Have a favorite way of fixing it? Do you bread and fry, or bake? Or do you stir-fry? Bread, muffins?? Is it the most versatile vegetable ever?
Vanessa:

Slice in half lengthwise, brush with olive oil, season with herbs, S&P and grill.
Cut into chunks. Put on baking sheet w/ red peppers and onions, drizzle w/ olive oil, S & P and roast for 20 - 30 min. Sprinkle w/ grated parmesan after cooking.
Make zucchini bread. (Similar to carrot cake)Freeze and give as Christmas or hostess gifts.
Julienne, cook w/ tomatoes, onions, garlic and herbs. Serve over pasta.
Saute' slices w/ onion, grape tomatoes, crushed red pepper and shelled shrimp. Add whole pitted olives, if you like them. Serve w/ warm French bread.
Still have too many? Call your local homeless shelter or food bank.

I mix cornmeal and flour salt and pepper roll the Zucchini in the mixture and fry southern style

I love em sautéed in butter with red bell peppers and basil. Sometimes I fry them up with corn, chili powder, and cinnamon. I also feed them to my fish, freshwater and marine, seems to keep them healthy and happy.

mmm, that sounds very good, whipsaw! chile powder, corn and cinnamon-- I cannot even imagine the flavor combination, but I will give that a try tomorrow!

Hey, whipsaw, I tried the pepper and cinnamon, very good and unusual. I took dinner to my mom that night, and she could not identify the "mystery spice" lol...but she sure did like them :-)

I give them to a group home that a friend works at, to family members that live near by, and eat them. I make all kinds of stuff! The first ones I normally bread and fry up! But I have so many right now it's ridiculous. I really should start selling them at the farmers market.
I cut some up today and fed them to my animals! =))

I have pattypan squash in the garden, kind of a pain to peel, but neat to look at.

I am afraid you will be disappointed with my answer.

Growing up we always grew zucchini, and we ALWAYS had an overabundance of it, like everyone that grows it. So after we were all zucchinied out, dad would gather up the big ones for a rousing game of zucchini baseball. As long as you use tennis balls, each zucchini, depending on the size, should last 4 to 5 trips to the plate. That is unless your pitcher is throwing some heat. :)

Oh, quite to the contrary, OTC! It made me laugh! I got a great visual... I have never done the baseball thing!
Your story makes me think of a book "Papa, my father" by Leo Buscaglia (one of my favorites). Leo was a young boy when they moved to Los Angelos, from the east coast (Brooklyn, I think). Anyway, Leo's dad had a garden in their backyard, and he grew all of the things that someone with the name "Buscaglia" would grow-- zucchini being high on the list of importance.
When their windfall harvest (as zucchini always has-- like manna from heaven ;-) began to mature, Leo's dad took his wheel barrow everyday, and went around the neighborhood handing out this crop which was at the time, basically unknown to their new west coast neighbors.
Poor Leo was not only fighting being the new kid in the neighborhood, and trying to make friends, but now this horrible thing started happening, lol, he was getting roughed up by the other boys on his street, and as they worked him over, they would say, "Buscaglia, I mean it, you get your dad to stop handing out that zucchini crap, coz if my mom MAKES me eat it one more time, you are dead!"
Just think of how many friends Leo might have made had his dad handed out "zucchini baseball bats" for the boys on the street! :-)

I'm glad you liked it Willow, but I got to thinking, and I remember my mom making this awesome zucchini chocolate cake. It's too late here to call her and get the recipe, but once I do I will post it for you :)

I always try to include them in my garden...Just wouldn't be a garden without them.
Through the years I have collected and created many recipes and uses for the "Zucchini".
My Hubby is German so...Zucchini relish is a must.
We dip slices in egg and milk and then dredge in flour and fry in hot oil.
Zucchini bread, muffins, cookies, waffles.
Let them get really big...cut in half and scoop out the seeds for next years planting. Fill with your favorite meatloaf recipe...put other lengthwise half of the zucchini back on top and wrap in foil and bake...350 degrees.. remove from oven and slice and either eat as is, top with grated cheese or dollop with sour cream! ;P
chunk up the tender small ones to add to a green salad.
These are always coming on so...we set extras on the patio entrance for visitors to take upon departure. We also enjoy loading them up for donations to local food banks.
Take one or more with you, every where you go to give to strangers or beggars or anyone.:)
